Do they restrict which animals, beyond (probably) not human?

All states permit animal sacrifice as long as you how careful not to cause unnecessary pain to the animal.

Except for endangered animals I suppose.

Farm animals are also exempted from most animal cruelty laws via the magic words "standard agricultural practice".
