Ask HN: Project ideas to do without internet?

What are some interesting programming projects that one can do without an internet connection? I would like to attempt them with nothing more than the official documentation of the language I'm working on.

The idea is to force myself to not rely so much on ChatGPT, co-pilot and just in general online content and learn in a more "analog" way, which will hopefully make my brain better at retaining new concepts.
