You’re not alone! I had to go with the monoprice Sous Vide cooker, since it was the only one that could be operated without a smart phone.

It was also cheaper, which is nice.

I wonder when lobotomizing "smart" hardware will become an established practice? That is, opening it up, cutting out the IoT chips, and replacing them with an off-line interface? Just like in the past, we used to convert PlayStations (to run pirate disks), remove SIM locks, and now we jailbreak our phones, I wonder when we'll start lobotomizing our fridges and desk lamps.

(Also, I consider to have just coined the term in this context, unless prior use is demonstrated.)

your jailbroken iPhone is easier to break into, BTW. baseband processor, firmware, all of that is still there and exploitable by the carrier or authorities.

That was a good choice. There is a nasty worm going around that will turn your water up from 55 degrees Celsius to 56 for 15 minutes ruining any chance of perfect 48 hour short ribs. It hit a lot of Michelin star restaurants in Iran really hard back in 2010.

I’m more interested in having my Sous Vide cooker continuing to work after the company goes under or Google buys them and cancels support.

You jest, but sillier things have been exploited to mine bitcoin or conduct DDOS attacks before.

I just ended up building a sous vide cooker with a dumb thermostat, heating element, water pump, and waterproof container. Cheap, and won't be subjected to the 'security' whims of any Internet of Trash manufacturers.

That's why I'm sticking with my old Honeywell 316. No bluetooth or USB on that baby.
