I believe at least containerd and CRI-0 are actively available and in use quite a bit. (There are some others I've seen, too.)

It's just saying if you use something else, it must follow at least the v1alpha1 or v1 CRI runtime standard.

The recommended runtime to use is containerd, which Docker itself is using under the hood. This is just about removing Docker as a piece of middleware.
