It's not about quality, but more about processes, for example we handle EU, US personal, financial data etc, we have strict rules about it (company rules, and gov ones), and there is no place for chinese model here.
I learned a lot working with LLMs and successfully delivering ambitious projects I wouldn't even have approached before. However, whatever I learned with LLMs, I successfully forgot almost immediately.
